I didn't think I'd be able to get this post up today. Who am I kidding? I didn't think I'd be able to make these cookies today, but the prep was quick (I used almond meal instead of the flour-ground almond combo), the cutting was quick, the baking was quick, and the decorating was quick. Sure there were 2 hours between making the dough and getting it ready to bake, but that was perfect because I got plenty of studying done in those two hours. I cut these cookies in the shape of a bone because I thought that would be cute and because I miss my pup. The cookies were crunchy and crumbling and delicious. I think it's great that these cookies are filled with jelly and covered in powedered sugar because I didn't find the cookies themselves to be sweet and I am personally a fan of sweet cookies.
