I managed to find some time to make this cake and I am so happy I did. The cake was great! I changed the recipe a little bit when I halved it. First I used two whole eggs, yogurt instead of buttermilk (for buttermilk substitutes go
here), and I made my own mascarpone! Ok, not really. I made a mascarpone substitute using this
recipe. At first, I didn't get how this would taste like tiramisu but then I added the coffee extract to the mascarpone and the taste was spot on.
Make sure to check out Megan's
My Baking Adventure blog for the recipe and the
TWD site to see what everyone else thought about this week's selection.
P.S. 3 more finals left! My google reader is at 1000+ and my TWD group has close to 500 posts. I hope to catch up on posts and commenting soon. I miss normalcy.
The mini cake
The mascarpone was the show stopper on this baby. A little bite. I skipped out on the chocolate. Can you believe it?

Better late than never!! lol ...I'm glad you liked it!
And wow! you were more intelligent than me who went and paid and arm and a leg for mascarpone, and made your own!!! COOL! I'm certainly keeping that trick in mind!!! LOL
Bravo, Stephanie!
You made your own mascarpone! That is amazing! Hope all goes well and don't feel guilty about the google reader overflowing!
Good luck with your exams! Glad you were able to find time to make this cake. It was super delicious!
Lovely! Great job!
Glad you got a baking respite. I hate when google reader gets out of hand. Good luck with those awful law school exams - I still shudder.
That mini cake is gorgeous...some day I am making minis when the boys are all grown and out of the house...LOL. Yours looks elegantly delicious.
