TWD: Tiramisu Cake

I managed to find some time to make this cake and I am so happy I did. The cake was great! I changed the recipe a little bit when I halved it. First I used two whole eggs, yogurt instead of buttermilk (for buttermilk substitutes go here), and I made my own mascarpone! Ok, not really. I made a mascarpone substitute using this recipe. At first, I didn't get how this would taste like tiramisu but then I added the coffee extract to the mascarpone and the taste was spot on.

And wow! you were more intelligent than me who went and paid and arm and a leg for mascarpone, and made your own!!! COOL! I'm certainly keeping that trick in mind!!! LOL

Glad you got a baking respite. I hate when google reader gets out of hand. Good luck with those awful law school exams - I still shudder.

I skipped the chocolate too - didn't miss it one bit though! Yours looks adorable, just the thing to get you through finals.
