Chicken Ranch Bites

Chicken is one of those things that can get really boring or overwhelming. There's so much you can do with chicken (after all, lots of things taste like chicken right?!) and either you stick to what works or are too scared to venture out and try something new. I don't know if this happens to anyone else, but sometimes chicken recipes seem so complicated to me because of the amount of ingredients that go into the dish. This dish I'm sharing with you is easy to put together and it's made up of ingredients that are always found in my kitchen, so hopefully they're in your kitchen too.
Chicken Ranch Bites
Serves 2

2-3 slices of bacon
1 large chicken breast
Ranch dressing
Cheddar cheese
Salt
Pepper

Preheat oven to 350 degrees F. Line a baking sheet with aluminum foil.

In a skillet cook the bacon. Remove the bacon and place on a paper towel covered plate. Keep the bacon fat.

Slice chicken breast into chunks (I cut mine into 4). Add salt and pepper and then cook chicken in skillet with bacon fat, about 5 minutes per side or until cooked through.

Place chicken chunks on baking sheet. Top with ranch dressing (as much as you like), bacon (I cut mine in half), and cheddar cheese.

Bake for 10 minutes or until the cheese is melted. Remove from oven, serve and enjoy!
