No-Bake Cheesecake

I am loving Sherry Yard's book. It's full of a lot of goodies. Some recipes are more involved than others, but some are easy peasy. This particular recipe is great. It's quick to put together and the end result would make others think it took you hours to make. Alex didn't believe me when I told him it was a no bake cheesecake. He said it tasted just like some of the other cheesecakes I have made. I topped my cheesecakes with slices of strawberry. These cheesecakes are just begging to be used in a cheesecake bar; they would go perfect with just about any topping.

No-Bake Cheesecake

Makes 24 mini cheesecakes

12 vanilla wafer cookies
8 oz cream cheese, at room temperature
1/2 cup sugar
2 Tbsp sour cream
2 tsp fresh lemon juice
12 ripe strawberries, hulled, and halved or quartered

Pulse the cookies in a food processor until you have crumbs. Line the cups of two mini muffin pans with paper liners and spoon a layer of cookie crumbs into the bottom of each.

In a large bowl with a hand mixer, beat the cream cheese and sugar at medium speed until smooth, about 3 minutes. On low speed, beat in the sour cream and lemon juice until well combined, about 1 minute. Scrape down the sides of the bowl.

Spoon or pipe the filling into the cups. Refrigerate for 2 to 24 hours, until set.

Before serving, top each cheesecake with a strawberry piece or two.

The cheesecake was so creamy. The strawberry was perfect. Soo good!

Wow! I love how adorable these little cheesecake bites are--and how easy! I think I need to invest in this book!

Another recipe to try out of the book is the Campton Place muffins. They are very moist and delicious.

This is proof that desserts dont have to be complicated. this would make an awesome make-ahead for a party.

I have this book from the library at home right now! I love reading her stories too. They are just fantastic. This sounded too good to be true - I'll have to make it soon!

I found your recipe and made this with my 12 and 13 year old girls class at church a few years ago just before Thanksgiving. The girls LOVED it. Some even said they would make them again for their family for the holiday. I'm probably going to change the recipe up a tiny bit and make them for an upcoming dessert challenge. Thanks so much for sharing!
