Banana Bread Cookies
What is it with me and anything banana bread? I made these cookies and ate 15 of the 20 cookies made. The only reason Alex even tried one of these cookies is because he came home before I finished them off. The cookies are on the cakey side, but what else can you expect from a cookie that actually tastes like banana bread? I thought a coconut rum glaze would go perfectly with these cookies so that's what I did (coconut rum glaze: powdered sugar with rum added until it reaches the desired consistency). Delicious!

1/2 cup butter, softened
1/2 cup white sugar
1 egg
1/2 teaspoon vanilla extract
1 banana, peeled and mashed
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 Tbsp powdered sugar
Coconut rum

Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets or line with parchment paper.

In a medium bowl, cream together butter and white sugar until smooth. Beat in eggs, vanilla extract, and banana. Combine flour, baking soda, and salt; blend thoroughly into the butter mixture. Drop by rounded tablespoons onto the prepared baking sheets.

Bake 10 to 15 minutes in the preheated oven, or until lightly browned. Remove from oven and cool.

Drizzle glaze over cooled cookies. Enjoy!

Hmm - I love a cakey cookie. Add banana to that and it's a total winner.
